Cooking Instructions
- 1
Let’s make the chicken first, add 6 cups of water to a pot and cook it on high heat.
- 2
Add the chicken drumsticks when the water starts to boil. Then add 3 sliced ginger and 1 stalk of sliced green onions. Place the cover and cook for 15 minutes at medium low heat.
- 3
After 15 minutes, turn off heat and let chicken sits for another 15 minutes. Then, take out and sprinkle salt on the skin.
- 4
Give it time to cool and cut each drumstick into 3 pieces. Once you're done, filter the broth with a strainer, let it cool, and store it for later.
- 5
Now we will make the sauce. Thinly diced ginger and green onions.
- 6
Heat oil in a pot for about 15 seconds. Add the hot oil to the diced ginger and green onions. Then add salt and mix well.
- 7
To make the chicken flavor rice, start by rinsing the rice. Add the rice into a rice cooker. Instead of adding water, I added the chicken broth.
- 8
Now we will make the Daikon soup. Thinly slice daikon and cut each disc into quarters.
- 9
In a pot, add remaining chicken broth. Heat up the broth until it start to boil, add daikon, cook it, and serve warm.

The Singapore chicken rice with ginger sauce I had at a cafe was so delicious. So I came up with this recipe to make it easily at home. You don't need to use fresh coriander if you don't like it! (Actually, I don't like it myself.)You can use boiled chicken instead of cooking it with the rice! The boiled chicken has a firmer texture, so choose whichever you like. Momofuku's ginger-scallion sauce Momofuku's ginger-scallion sauce
For the past two years, foodies in Vancouver (myself included) have been anxiously awaiting the opening of Momofuku's newest location. Unfortunately, today's news announced that David Chang's flagship restaurant will not be coming after all. Bummer. I was looking forward to their bao, and really wanted to try their famous ginger-scallion sauce. Not that Vancouver's lacking in Asian food, but I was curious how a Michelin-starred chef puts his own spin on it. Anyway, since they're no longer coming, it seems the only way I'll get to taste Momofuku's ginger-scallion sauce is to make it myself. So I found the below recipe from epicurious.com. It's similar to an onion sauce I posted way back, except better, of course. Still, I did tweak the recipe oh-so-slightly, as noted in Method. Robert Gonzal -

Ginger and Onions Sauce Ginger and Onions Sauce
The title of this recipe isn't a typo. There are three types of onion in this dish. The inspiration came from, of all places, a Chinese stall at a food court. They served something similar with their steamed chicken and it blew my mind, so I had to give it a go. As seen in the picture, I like mine with roast chicken, although it's also great on fried or steamed fish. Robert Gonzal -
