Ingredients

  1. 4chicken drumsticks
  2. 6 cupswater
  3. 3 slicesginger
  4. 1 stalkgreen onion sliced
  5. 1 tablespoonthinly diced ginger
  6. 2 tablespoonthinly sliced green onion
  7. 4 tablespooncooking oil
  8. 1/4 teaspoonsalt
  9. ~1 cup of chicken broth
  10. 1 cupdried short grain rice
  11. 2 cupsthinly sliced daikon
  12. ~4 cups of chicken broth

Cooking Instructions

  1. 1

Let’s make the chicken first, add 6 cups of water to a pot and cook it on high heat.

  2. 2

Add the chicken drumsticks when the water starts to boil. Then add 3 sliced ginger and 1 stalk of sliced green onions. Place the cover and cook for 15 minutes at medium low heat.

  3. 3

After 15 minutes, turn off heat and let chicken sits for another 15 minutes. Then, take out and sprinkle salt on the skin.

  4. 4

Give it time to cool and cut each drumstick into 3 pieces. Once you're done, filter the broth with a strainer, let it cool, and store it for later.

  5. 5

Now we will make the sauce. Thinly diced ginger and green onions.

  6. 6

Heat oil in a pot for about 15 seconds. Add the hot oil to the diced ginger and green onions. Then add salt and mix well.

  7. 7

To make the chicken flavor rice, start by rinsing the rice. Add the rice into a rice cooker. Instead of adding water, I added the chicken broth.

  8. 8

Now we will make the Daikon soup. Thinly slice daikon and cut each disc into quarters.

  9. 9

In a pot, add remaining chicken broth. Heat up the broth until it start to boil, add daikon, cook it, and serve warm.
