Ingredients

45 minutes
8 persons
  • 250 gramsfresh red chillies
  • 200 gramsjaggery
  • 2 tbspcoarse grinded coriander seeds
  • 2 tbspcoarse mustard powder
  • 1 tbspkashmiri red chilli powder
  • 1 tspturmeric powder
  • 1 tspdry mango powder
  • 1 tspasafoetida
  • 1 tbspfennel seeds
  • 1 tbspcumin seeds
  • 2 tbspoil
  • as per tasteSalt

Steps

45 minutes

    Wash chillies and pat dry then cut it from centre and remove the seeds and chop them.

  2. 2

    Coarsly grind fennel seeds and cumin seeds, mix them with coarse grinded powders(kuria). Grate jaggery in thin slices.

  3. 3

    Heat oil and add half of mix spices. Sauté for a while. Further add jaggery and let it melt a little.

  4. 4

    Then add red chilli powder, turmeric powder, dry mango powder, mix well and cook for a few seconds on a slow flame.

  5. 5

    Now it's time to add chopped chillies and salt. As you add red chillies, it will leave it's water. Let it cook till it becomes thick and water is evaporated. Lastly add spared spice mix, cook for a few minutes. Then turn off the heat.

    Let it cool completely. Then store it in a clean, air tight glass jar.
