Makai Khichu

Makai khichu is basically a steamed maize flour dish. It is very easy to prepare and it requires very little ingredients. It is almost the same as papdi no lot (a very popular Gujarati snack) or steamed rice flour. It tastes great served with pickle spice and groundnut oil.

Makai khichu is basically a steamed maize flour dish. It is very easy to prepare and it requires very little ingredients. It is almost the same as papdi no lot (a very popular Gujarati snack) or steamed rice flour. It tastes great served with pickle spice and groundnut oil.
Steps

Add two cups of water in a pot and start heating. Add cumin, carom seeds, sesame seeds, green chillies, garlic paste, papad khar and salt to it and mix everything well. When it starts boiling, turn off the heat.

Take flour in a big bowl and add the water to it and mix it well with a spatula so that there are no lumps remaining. When it cools down a bit, add it to a greased plate and steam it in a steamer for 20 minutes or until done. Turn off the heat and let it be in the steamer for another 10 minutes.

Now remove it from the plate and serve it along with pickle spice and groundnut oil. You can even garnish it with fresh garlic if it is available.
