I made a whole stiffed roast chicken and needed a quick stuffing for the insides. leftover stuffing got turned into these stuffing "cups" - nothing wasted

Tip breadcrumbs into a bowl and season well with salt and pepper. Dice onions and parsley and add to the mixture. You can use storebought stuffing breadcrumb mixture but I always have homemade breadcrumbs in my freezer. You can make your own using this tip:

Peel and crush your garlic cloves before finely dicing. Add to the bread mixture. Pull dried thyme from thier springs and add to the mixture.

Add eggs and mix well. Use to stuff any meats, I stuffed a roast chicken and the leftovers I spooned into a muffin tray, drizzled over a little oil and bake at 180c for 30 minutes to make stuffing cups
