Wash rice 2-3times in water to remove excess starch. Soak them for 20minutes. Washing them will also prevent them from becoming sticky while cooking. After 30 minutes, drain soaked rice.

Chopped veg set aside.Then wash chicken throughly and drain well.

Heat oil and ghee into a pot add cinnamon, cloves, cardamom, pandan leaves, and sauté for few seconds.

Add chopped onion and sauté until it turns light golden brown.

Then add ginger garlic paste and sauté low flame for a minute. Then add chicken fry it well. Then add Turmeric, chilli powder and fry it well.

Add tomato,green chilli,coriander and mint leaves.Next begin to sauté on a very low flame for 3to 5minutes.Then add biriyani masala,curd and lemon mix it well.

The gravy come to thick consistency add water and salt.cover it cook for five minutes. You can adjust by adding salt or spicy

Next pour the rice in the gravy mix it well.cover it cook for 10 minutes high flame.After we remove the pan on the stove,heat a old tawa until very hot.place this biriyani pot over the pan.Layer the rice,mint and coriander leaves. Add ghee as well. Then close the lid.Lower the flame and cook for 10minutes.switch off the stove and allow to rest for 15mins.

Serve chicken biriyani hot with a raita.
