Basic creamy tahini sauce (dip, salads, wraps)

If you have a tub of tahini and don't know what to do with it, this is a very simple, basic idea, and very versatile. I love to whip this up as a creamy dip when I need a quick snack. Or put it into a falafel wrap or drizzle over roast veg.
You can add crushed garlic or chopped herbs if you like.
I haven't given measurements here as I find it's best to do it by eye.

Place the tahini in a bowl, then add a splash of cold water. You'll see that it naturally separates.

Whisk it with a fork, adding the water a splash at a time. You'll see the tahini is a bit stringy at first, then it'll start to come together.

Add more splashes of cold water until it starts to become smooth and creamy.
If it's too thick and claggy, keep adding splashes of water and whisk to loosen it up.

Once creamy and smooth, season to taste with salt and lemon juice.
