Ingredients

  • 3-4 cupscooked shredded chicken
  • 1small red onion, chopped
  • 1tomato, chopped
  • 1cucumber, peeled and diced
  • 1 cupthawed frozen corn
  • 1/8 teaspoonblack pepper
  • 1/2 teaspoongoya adobo (light version)
  • 1 tablespoongarlic powder
  • 1/4 cupolive oil
  • 3 tablespoonsred wine vinegar
  • 1avocado, cut into cubes

    Put all ingredients, except avocado, into a large bowl, mix together, refrigerate overnight or for several hours……
