Idli is such a unique recipe that making it a fusion food was fun. I stuffed with Batata Vada and loved the merging. Enjoyed with traditional coconut chutney

For Batata Vada - in a wok heat oil, add mustard seed, cumin seeds, and curry leaves, and stir. Add ginger paste, chili paste, and turmeric powder and mix well, cook for 2-3 mins. Add coarsely mashed boiled potato, salt, and chopped coriander and mix well. Add lemon juice and set aside to cool.

Make small tikkis from the cooked potato, and set them aside.

For Idli - in a bowl add Semolina, yogurt, and salt, and whisk well, set aside for 30 mins, add 3/4 cup water slowly, whisk and keep it covered for 15 mins.

Grease Idli moulds with ghee or oil, pour half the batter, pour the Tikki, add more batter on it, complete the batch, and drizzle Batata Vada powder.

In a steamer add the Idli tray and steam for 7-8 mins. Check the doneness, demould after 1-2 mins, set aside.

Garnish with chopped onions, coriander leaves, and fried chili.

Plate and serve with traditional coconut chutney.
