Had no special things to spice up my instant noodles except one small potato. So here goes..
Steps

Wash, peel, and chop the potato into small cubes. Peel and finely chop the garlic and onion.

Heat oil in a pan then add the chopped garlic, and onion and saute for 2 mins. Then add the chopped potatoes and stir-fry them.

Add salt, chili flakes, and oregano and continue to stir fry them till they are 80% done. Boil enough water for noodles in a separate pan alongside.

Now take a tablespoon or two of the crispy stir-fried onion garlic potato mix and keep it aside (for final topping). Add the boiling water to the potatoes in the pan.

Now add the instant noodles and half the tastemaker. Cook till the noodles are done. You can make it soupy if you like (I usually prefer my noodles with no water)

Finally add the other half sachet tastemaker, pepper powder, and chopped coriander, and give it a good stir.

Remove from heat and serve your potato maggi in a bowl. Top it with the reserved stir fry and enjoy!!
