Shepherd's Pie (Pastel de Papas)

Amazing shepherd's pie! I asked my kids what they wanted to eat, and they chose this dish for today! It's my first time making it, but I always watched my mom prepare it. The only changes I made were leaving out the olives and adding ham and cheese.

Amazing shepherd's pie! I asked my kids what they wanted to eat, and they chose this dish for today! It's my first time making it, but I always watched my mom prepare it. The only changes I made were leaving out the olives and adding ham and cheese.
Steps
- 1
To save time, start by boiling water. Cook 3 eggs in the boiling water. Meanwhile, peel and chop the vegetables. Heat a pot with a little oil. Sauté the onion and bell pepper until soft.
- 2
Once the vegetables are sautéed, add the ground beef, carrot, and your favorite seasonings.
- 3
When the potatoes are tender, mash them and season to taste. Mix in 2 eggs.
- 4
Once the meat mixture is ready, add the hard-boiled eggs you cooked earlier, chopped. Start assembling the pie.
- 5
Spread a layer of mashed potatoes in a baking dish, then a layer of the meat mixture. Add a layer of ham and cheese, then another layer of mashed potatoes on top. Sprinkle with cheese and bake for 15 minutes.
