Mango Rice Kheer

Dessert is always a hot favourite to kids and Kheer is no doubt an absolute love when it comes to traditional dessert / sweets.
Rice Kheer is a popular and traditional dessert prepared during festivals or can be prepared without any specific reason as kids love sweets.
As mangoes are available in abundance , thought of preparing Mango flavoured Kheer , it can be a wonderful accompaniment to lunch box.
Mango Rice Kheer

Steps

Soak rice for 30 - 40 minutes, drain excess water.

Cook mango pulp for 5-6 minutes to evaporate excess juice and make it thick.

Boil milk and allow to come to boiling point, simmer milk by stirring for 5-6 minutes.

Then add soaked rice + salt + bay leaf + cardamom and cook till rice turns soft.

It takes around 20 minutes for rice to cook, then add sugar and cook further for 4-5 minutes.

Gradually mixture thickens, if required add little more milk for a perfect consistency.

Lastly add thick mango pulp, mix well and cook further for 2-3 minutes.
Mango Kheer is ready. - 8
Allow to cool completely and then it is ready to serve or best is to refrigerate for 3-4 hours and then consume.
