Raita is a salad with yogurt and a popular accompaniment for spicy biryani and pulao and also kababs or any spicy Indian meal.Yogurt is good for our digestive system and helps us to digest spicy foods. Adding vegetables like cucumber,carrot,tomato,onion and cilantro to it not only enhances the flavour but produces extra nourishment. Ingredients

  • 1 small cucumber chopped finely
  • 1tomato deseeded and chopped finely
  • 1 tbspcarrot grated
  • 1 small onion chopped finely
  • 1galic clove grated
  • 1 cupthick yogurt
  • 1/4th tsp roasted cumin powder
  • 1 pinchred chilli powder
  • 1/4th tsp chaat masala
  • As per tasteSalt
  • 1/4th tsppowdered sugar (optional)
  • 1 tbspcoriander chopped finely

    Chop and assemble all ingredients in a bowl. Whisk yogurt in a bowl with a whisker till smooth.

    Add roasted cumin powder, grated garlic clove, chaat masala, salt, and 1/4 th tsp powdered sugar to taste. Give it a nice mix and add the chopped vegetables to it. Toss and garnish with chopped coriander and a sprinkling of red chili powder.

    Serve chilled, garlic-flavored delicious raita as a side with biryani, pulao, kababs, or any fried or grilled items.
