Ingredients

2m bread crisp, 10m crabmeat mix prep
4 people
  1. 1 1/2 poundwhole cooked crab yields up to 1 pound fresh crab meat, or use 1 pound imitation crab meat, called surimi
  2. Juice of large ripe Meyer Lemon
  3. 4warm freshly baked sour dough french rolls, 6” long, opened lengthwise
  4. 4 leavesfresh butter lettuce or swiss chard
  5. 2 Tbsunsalted butter to toast breadrolls
  6. 4 Tbshot molten unsalted butter to drizzle over crabmeat on roll
  7. 4 Tbshomemade mayo
  8. 4 Tbsfinely chopped mild white onion
  9. 1 Tbshorse radish
  10. Red Tabasco pepper sauce: 4 drops for mild, 8 for tangy, 16 for spicy
  11. Tspgarlic, tsp oregano, tsp dill weed
  12. Cost: whole dungeness crab is market price, usually $10 to $20 each, imitation crab is $4 per pound. $5 to $1 per luncheon for this treat

Steps

2m bread crisp, 10m crabmeat mix prep

    Mix flaked crabmeat with horse radish, mayo, chopped onion, lemon juice, pepper sauce and herbs. Let mix rest ten minutes at room temperature so flavors can mingle while you crisp the first roll.

    Use large cast iron skillet. Melt 6 Tbs unsalted butter, open roll, fry till golden on both top and bottom, about 1 minute.

    Fill fresh leaf of swiss chard or lettuce with ample crabmeat mix, put on warm roll, pour Tbs molten butter on top, close and serve, then fry next one. Enjoy.
