Fruit Tempeh Yogurt Pasta Salad

QQ noodles paired with your favorite seasonal fruits, along with cheese cubes and tempeh, make the flavor and texture richer and more layered. All fruits and other ingredients can be varied as you like. Other than the noodles, there's basically no need to use the stove, making it great for cleaning out the fridge. Cool and sweet, it's definitely the best meal for hot summer days.
This time I used grapes, flat peaches, and mango. You can also substitute with other berries, apples, bananas, pineapples, etc. It's not recommended to use fresh citrus fruits, as they might taste bitter, but canned citrus fruits are a different story. Cheese is optional, and tempeh can be replaced with ham, shredded chicken, etc. Do whatever makes you happy 🥰.

Steam the tempeh and cut it into small pieces. Meanwhile, bring a large pot of water to a boil, add a pinch of salt, and cook the pasta according to the package instructions or to your liking. Drain and rinse with cold water, then drain again.

While the pasta is cooking, wash and dry the grapes, pit and peel the flat peaches, and cut them into small pieces. Cut the mango and cheese into small pieces as well. Zest the lemon and squeeze out two tablespoons of lemon juice.

Mix the cinnamon powder, lemon juice, and lemon zest into the yogurt.

In a large bowl, combine the cooled pasta with all the ingredients and pour the dressing over. Mix well.

It's basically done. If you have time, put the salad in an airtight container, cover, and refrigerate for 1-2 hours to let the flavors meld. Serve and enjoy.
