Zucchini and Carrot Burgers

I had never made vegetarian burgers before, and honestly, I was pleasantly surprised. These particular ones with zucchini and carrot were very tasty, but for those who prefer meat, you can make them with chicken. We'll definitely make them again soon! 😋

I had never made vegetarian burgers before, and honestly, I was pleasantly surprised. These particular ones with zucchini and carrot were very tasty, but for those who prefer meat, you can make them with chicken. We'll definitely make them again soon! 😋
Cooking Instructions
- 1
Peel and chop the carrot and zucchini.
- 2
Chop or grate the vegetables, depending on the tool you want to use, either a grater or a food processor.
- 3
In a bowl, mix the carrot, zucchini, egg, salt, pepper, and oregano. Finally, gradually add the breadcrumbs until the mixture becomes thicker.
- 4
Form the mixture into burgers. They can be eaten immediately or frozen in plastic wrap for another day.
- 5
Cook in a pan with a few drops of oil for about 10-15 minutes over medium heat with the lid on. They should not be too dry or too moist. Serve on a plate or in a hamburger bun.

Since my husband was putting on weight, I created this dish to serve him a healthy and tasty dish. The key is to slowly cook the burgers through on low heat. That will make them firm and less likely to break apart. Mayonnaise is optional, but I recommend a small amount for taste. Don't add too much or they will become greasy tasting. I have been making these delicious vegan burgers for years. If you want them to be firmer and hold their shape more, just add a beaten egg to the mixture plus an additional 1/3 cup of oats; they won’t be vegan, though, but they will still be delicious.#vegetarian #cilantro #mushroom #oats #chili #sandwich #patty #plantbased Ricardo -
