Ingredients

2 servings
  1. 1 cupBrown Rice
  2. 1large carrot
  3. Red Onion
  4. 1Red Pepper
  5. 2 clovesgarlic
  6. 1/2 cupmushrooms
  7. Ground Ginger
  8. Red Pepper Flakes
  9. Salt
  10. Black Pepper

Cooking Instructions

  1. 1

    Cook Brown rice. While rice is cooking chop the carrot, red onion, red pepper, mushrooms and place in a bowl. Drizzle with olive oil and add in spices and toss.

    Add your vegetables to a frying pan and cook until desired softness. Add in rice and stir fry sauce.

  3. 3

    Can also add in tofu if desired. Optional toppings: Chopped nuts, scallions
