Young or baby potatoes always have a rustic feel for me, so this recipe is simple and “country-style”, what I would have as a kid.

Wash the potatoes, but don't peel.

Cut into bite-size pieces, usually in half is enough.

Put the potatoes into a pot and cover with cold water. Add salt and herbs to taste. Cover with a lid and put on high heat.

In a cold frying pan, mix cooking oil and soy sauce.

Slice chicken breasts into 5-6 chunks, put into the frying pan and mix with oil and soy sauce.

Put the frying pan on medium heat.

Meanwhile, when the water in the potatoes pot starts boiling, turn it to low heat and set a timer for 25 minutes.

Keep the frying pan on medium heat and stir the chicken every 1-2 minutes.

When the liquid evaporates and the chicken starts turning golden, take the frying pan off the heat and set aside.

When the timer for the potatoes fires, drain the water.

Serve immediately. For best taste, put some butter on top of the potatoes and garnish with fresh cherry tomatoes.
