Wash and peel potatoes. Make small cubes and steam until nice and soft.
Let it cool. Mash the potatoes to a very smooth paste. Add 3 tablespoon icing and half of the almond powder and mix. Add the remaining almond powder and icing and mix. - 2

You should have a soft dough consistency. Add in the red food colour or your choice. Grease your palm with ghee and knead the dough. Grease a mould with ghee. Make small balls from the dough and press it in the mould. Garnish if preferred. Enjoy the barfi.
