Ingredients

20 minutes
10 servings
  • 225 gself raising flour
  • 2 tspbaking powder
  • 2 tspbicarbonate of soda
  • 3 tspginger
  • 2 tspmixed spice
  • 120 gcaster sugar. I use way less
  • 6 tbspsyrup. Again I use way less
  • 75 gbutter, I used 40 g margarine

Steps

20 minutes
  1. 1

    Preheat oven 180 c line baking trays.

  2. 2

    Place the four, bicarbonate of soda, baking powder dried ginger and mixed spice in a bowl rub in cold diced butter by hand until breadcrumbs.

    Stir in caster sugar, pour in syrup and mix with a spoon.

  4. 4

    Bring the dough together with your hands until you get a ball of dough.
    Roll into walnut sized and cook.

  5. 5

    I also sandwich some together with a sugar free chocolate spread with melted white chocolate round the outside.
    I over melted. Don't do that ☺️.
    They still tasted great though.

Sorry thanks for flagging that up I added diced butter in the method and not the ingredients.
