Durga puja is around the corner. When talking about Durga Puja it reminds us of West Bengal and Bengali dishes. Along with many other dishes,Basanti Pulao is one of the most popular in Durga Puja celebration. Basically in this Pulao, Bengali use Gobindbhog rice, which are aromatic. But out of Bengal, it is hard to find this rice. So, I made this with Basmati rice.
I searched and surfed on Internet to find Durga puja special recipes. And find this interesting. I prepared this pulao first time with the help of Internet recipes. I went through many recipes and finally prepared this pulao with some changes. This sweet rice will go perfect with any spicy curry. Though this recipe is easy and simple but needs some care, when cooking rice.

Wash rice and strain the water completely and spread it on a large plate or clean kitchen towel and let it dry completely.

Soak saffron in 1 tbsp milk. Make halves of cashew nuts.

Once rice dries completely, add turmeric powder, garam masala, salt and 1 tsp ghee in it. Mix it very carefully, as at this satge rice becomes brittle after dried and it may be broken.

Let it marinate for about 30 minutes.

Now heat rest of the ghee in nonstick pan, add all whole spices and saute till they turns aromatic. Further add cumin seeds and let it splutter, add cashew nuts and saute till it turns light brown. Lastly add kismis, in a few seconds it will be swallon and pop.

Now add marinated rice and mix well with very light hand. Again take care in mixing else rice grain will be broken.

After few seconds, add ginger and water. Rice water ratio should be 1:3. Add sugar too.

Once it starts boiling, cover the pan and slow down flame to simmer, till rice is properly cooked.

Once it cooked, lastly if you wish can add dollop of ghee for aroma.
