  • 1 1/2 cupBasmati rice
  • 2 1/2 cupcoconut water,
  • 1 cup coconut milk
  • 4 tbspCoconut oil
  • 1 tbspbutter
  • 1 tspMustard seeds
  • 1 tbspCumin seeds
  • 1/2 tspasafoetida powder
  • 1/2 cupcurry leaves
  • 10Clove
  • 2Star Anise
  • 1 inchCinnamon
  • 1bay leaf
  • 10Cardamom
  • 1 tbspGinger garlic paste (garlic is optional)
  • 1/4 tspturmeric powder
  • 4Green chillies, chopped
  • 20Cashew
  • 1 tspSaffron
  • 1 tspjavithri
  • as requiredSalt

    Soak the rice in 2 cups of water for 20 minutes in a bowl, drain.
    Break the coconut and collect the water in a glass. You can buy coconut water from grocery stores in our town. I cook rice in electric cooker. Add a tablespoon of coconut oil and coconut water, and coconut milk into the rice cooker and add the rice. cover and turn on the cooker. When rice is half cooked, open. add 1tbsp butter, stir, and close the lid. After the rice is cooked, the cooker will automatically turn off.

    While the rice is cooking, take care of the rest of the work.
    Grate the coconut.
    Heat 3 tbsp oil in a wok over medium heat - 2 min. Add mustard seeds, after spluttering, add cumin seeds, asafetida powder, cloves, cinnamon, cardamom, green chilies. curry leaves Add star anise, cashews--fry for 2-3 minutes until the cashews turn golden brown. Add ginger garlic paste and turmeric powder. Add grated coconut and fry. Add cooked rice. Stir in saffron with javithri. Add salt and stir.

    Lower the fire; Cover and simmer for 5 minutes. Delicious pulav is ready. Rest for 15 minutes. Only then will all the aromas and flavors come together. Transfer to a serving bowl serve with rise, veggies, papads or chips. I served with stir fried potato curry and onion raitha.
