Baby spinach & potato sabzi 🥬🥔
This simple green vegetable is easy and quick to make, serve as side dish in breakfast, lunch, dinner with plain Indian paratha, toasted bread slices, vegetable rice pulao. Enjoy this healthy green vegetable sabzi

Wash and dry baby spinach 🥬, chopped finely and keep aside. Cut onions 🧅, tomato 🍅, green chillies, coriander leaves and keep aside.

Take a pan and add oil for shallow frying, add potatoes cubes 🥔, fry them until golden, remove them on kitchen napkin, keep aside.

Heat oil, add cumin seeds when start to crackle, add finely chopped onions 🧅, cook till golden, add finely chopped tomato 🍅 mix well. Add salt mix well.

When tomato 🍅 become mushy, add ginger garlic paste 🧄, finely chopped green chillies and mix well. Add kashmiri red chillies powder 🌶️, coriander & cumin powder and mix well.

Finally add chopped baby spinach 🥬 mix well with the masala and cook on slow flame. But stir always, cook for 5 mins and add fried potatoes cubes mix, cook for 1 min and serve hot.

Garnish with finely chopped coriander leaves 🌿. If desired
