Toast the bread (in a toaster or on a griddle) until crispy, then set aside.

Mash the avocado with a fork on a small plate, adding salt and pepper. Meanwhile, roughly chop the almonds and toast them in a pan over medium heat for 3 minutes, stirring often. Set aside.

Prepare sunny-side-up eggs with a pat of butter in a pan, cooking for a few minutes.

Spread the avocado on the slices of bread, place the egg and almonds on top. Add a sprinkle of sesame seeds and a few drops of balsamic vinegar.
