Heat olive oil and butter in a wok. Sprinkle minced garlic and grated ginger. Saute till garlic releases its aroma. Add finely chopped onion and saute till translucent. Add red chili powder, and garlic paste, and toss.

Add the chopped vegetables and fresh tomato puree (made by boiling chopped tomatoes with salt, cooling, then blending in a grinder and strain). Add sugar, salt to taste, black pepper powder, oregano, and red chili flakes. Cook stirring occasionally for 5 minutes.Now add 3-4 cups water. Make a slurry of cornflour.Add it to the soup and boil till vegetables are cooked but not mushy.They should not lose their crunch. Add butter and fresh cream,chopped coriander,lemon juice and mix to combine all.

Pour equal quantities of soup into 4 serving bowls and top it up with grated cheese, chopped coriander, and nachos. Serve immediately.
