Ingredients

4-5 persons
  1. For making white rice
  2. 1 cupbasmati rice
  3. Salt to taste
  4. 1Cardamom
  5. 1small cinnamon stick
  6. 2cloves
  7. Few black peppercorns
  8. 1bay leaf
  9. (Put all whole spices in a potli)
  10. 1 tspghee
  11. Juice of half lemon
  12. 2 cupsWater
  13. For making spicy yellow rice
  14. 1 cupbasmati rice
  15. Salt to taste
  16. Potli of similar whole spices as mentioned above
  17. 2 tbspbiryani masala
  18. 1 tspghee
  19. Juice of half lemon
  20. Chopped coriander leaves and torn mint leaves (handful)
  21. 1-2fresh green chillies
  22. 2 cupsWater
  23. For chicken marination
  24. 1/2 kgchicken
  25. Salt to taste
  26. 1/2 tspturmeric powder
  27. 3/4 tspred chilli powder
  28. 1/2 tspblack pepper powder
  29. 1/2 tbspcoriander powder
  30. 1/2 tspcumin powder
  31. 1 tspchicken masala
  32. 1 tbspginger garlic paste
  33. 1 tbspmustard oil
  34. 2-3 tbspthick curd
  35. For making chicken
  36. 50 mloil
  37. whole spices like cardamom, cloves and black peppercorns
  38. 2onion (sliced)
  39. 1 tspginger garlic paste
  40. 1tomato (pureed)
  41. Marinated chicken
  42. Water for thick gravy
  43. 1/2 tspgaram masala
  44. 3onions (Fried onions)
  45. (add some in chicken and keep some for assembling)
  46. Coriander leaves, mint leaves for garnish
  47. 2boiled eggs halved required while assembling

    Start by cooking spicy rice. Cook till almost done. Remove the spice potli. Keep aside.
    Next make fried onions. Keep aside.

    Next start cooking chicken.
    Heat a kadhai with oil.
    Put whole spices as mentioned.
    Next add onion slices. Saute till brownish. Next add ginger garlic paste. Cook till rawness is lost. Next add tomato puree. Cook for some time.

    Next add the marinated chicken. Sear for 5-7 minutes.
    Cook till almost done. Add little water as an when needed but don't make it watery. As it's almost done, put garam masala and fried onions. Give a mix. keep it aside.

    Next in rice cooker container, cook plain rice with the above-mentioned ingredients. Cook till almost done. Remove the spice potli.

    Now assemble everything to get it all cook together.
    So rice cooker has white rice which is almost cooked.
    Over it put the almost cooked chicken with thick masala gravy.

    Now upon it, put chopped coriander leaves, torn mint leaves and fried onions.

    Next top it with almost cooked spicy rice.
    Over this put freshly chopped coriander leaves and torn mint greens.
    Add fried onions and a tsp of melted ghee.
    Place halved boiled eggs on top.

    Now heat a tawa. Upon the heated tawa, place the rice cooker container. Cover the lid and place something heavy on the lid.
    Let it get cooked at the slowest heat, till all the layers get cooked and you get a nice aroma.
    Switch the heat off and do not disturb the biryani for 10-15 minutes.

    Later, transfer the biryani into a flat plate/tray so that you can find different colours, textures and taste all together in one tray.
    Serve with raita.
