1 cupheavy cream
1/2 teaspoonvanilla extract
1/8 teaspooncream of tartar (optional, for firmness)
2 tablespoonsconfectioners sugar, to taste

Mix all ingredients in a bowl and beat (with electric beater or a whisk) at consistent speed until desired consistency is reached. Do not overbeat or it will turn into butter.
