Slice onions. Wash prawns and devein keeping the tail intact.

In a wok add water and bring it to boil. Add sliced onions and boil until completely softened

In a mortar & pestle add whole garam masala of green cardamom, cloves, cinnamon stick and coarsely crush. Set aside

Once the onions are boiled, strain and keep on a plate to cool. Add to a blender, add 2-3 green chilies and blend to a smooth paste

In a wok add the coarsely crushed garam masala, stir for 1 min to get an aroma, add the onion paste, stir until the raw smell is gone

Add 2 green chilies and 1 tsp of ginger paste retaining the rest for further use and stir until raw smell is gone.

Add Kashmiri red chilli powder, add 2 Tbsp water and stir to cook well. Add 4-5 Tbsp water as the consistency will dry up.

Add 2 more green chilies, salt and sugar and the prawns. Mix well until prawns are well coated

Add Orange juice, mix well. Add raisins. In a small bowl add rest of the ginger paste and 2-3 Tbsp water. Add this to the wok now. Mix all well and let the prawns come to a boil

When you have reached the desired consistency set aside.

Plate with steamed rice and enjoy 😊
