Ingredients

  1. 500 gpork ribs
  2. 1 pieceold cucumber
  3. 5 piecesdried oyster
  4. 10 gdried red date slice
  5. 10 gdried goji berries
  6. 9 slicesginger
  7. 2 tablespoonscooking wine
  8. 1.5 teaspoonssalt

    Wash the old cucumber. Remove the seeds. Cut into big slice.

    If using frozen pork ribs, properly thaw it first. Then rinse with clean water a few times.

    Soak the dried oyster in hot water for 10 minutes, drain and leave aside.

    Prepare ginger slices.

    Prepare dried red date slices.

    Rinse the dried goji berries, drain and leave aside.

    Prepare a pot of water about 1200ml. Add 6 slices ginger, 1 tablespoon of cooking wine and the thawed pork ribs. Cover and turn on high heat. Remove the pork ribs once you see scum floating.

    Prepare a pot of hot water about 1200ml. Add the parboiled pork ribs, old cucumber, red date slice, presoaked dried oyster, 3 slices ginger and 1 tablespoon cooking wine. Cover and turn on high heat. Boil for 20 minutes. Turn to low-medium heat and boil for 40 minutes.

    Add the goji berries and salt. Turn off the heat and simmer with residual heat before serving.

    Ready to serve with cooked rice.
