Ingredients

45 minutes
30 potato balls
  • 35oz. peeled potatoes (after peeling). Cut in chunks
  • Salt the water for cooking the potatoes
  • 1egg, beaten
  • 3tbsp. Grated parmesan cheese
  • 1 1/2tbsp. chopped parsley
  • 2oz. chopped prosciutto o regular ham
  • 6oz. small diced mozzarella cheese
  • breading
  • Flour or
  • Panko bread
  • OPTIONS: Panko with sesame seeds, panko bread with quinoa
  • Oil for frying

Steps

45 minutes
  1. 1

    Cut and measure all the ingredients.

    Place the potatoes in a pot with water and salt and cook until are soft.

  3. 3

    Drain the potatoes in a colander. In a tray put the potatoes in the oven to dry for 20 minutes at 400° F.
    Mash the potatoes and let it cool off. Mix the potatoes with the beaten egg, parmesan cheese, parsley and prosciutto or ham. Taste and add salt If necessary. If you want, you can cook then with the skin on and peel then ounce is cold.

    Divide the mashed potatoes in 2 then roll. Cut about 14 - 15 pieces each roll.

    Cover the palm of your hands with flour then put a portion of mashed potatoes and make the shape of a little cup and add a piece of cheese in the center. Close the sides and make small balls.

    Fry the balls with just flour or dip it in eggs Panko and fry.
