When we talk about soups the mist common soup comes to our mind is tomato soup. Let's make a creamy, silky restaurant style tomato soup and to accomplish it more serve it with a grilled cheese sandwich. The combination of piping hot smooth tomato along with the cheese sandwiches will make you fall in love with that. Let's start the easy recipe.

Choose red pulpy tomatoes for the soup as it gives a beautiful colour and enhance the taste as well. Roughly chop the tomatoes and put it in a pressure cooker along with ginger, garlic, coriander stems Roughly chop them also. These stems have a lot of nutritional value so add them to your soups. Then add red chilli powder, turmeric powder, salt, black pepper corns and seeds of black cardamom. Also add 1 tbsp oil and 1 cup of water to it and pressure cook it for 5-6 whistles on high flame.

Then allow the pressure to release. In the meantime take a wok or pan add 1 tbsp oil and 1 tbsp butter to it. When the butter melts add the finely chopped onions to it. Cook it till it get transparent don't make it brown. Then add the cooked tomato mixture to it and allow it to boil. When it comes to boil then add sugar and dried kasuri methi. Kasuri methi is optional and sugar is a must to go ingredients to balance the flavours. Always rub the kasuri methi between your palms before adding.

Allow it to boil again and then lower the flame and cook for 5 minutes then off the flame. When it cools down a bit then grind it with an emulsion blender or in a mixer grinder to a smooth paste. Don't add any water while grinding. Once grinded pass the soup through the sieve to make it smooth and silky. You can add 2-3 tbsp water while straining the soup to get less wastage. Now again transfer it to a wok and boil it. At this point taste it and adjust the flavours.

Add 2 tbsp butter while boiling to get that shiny texture and it's totally optional. Add 1 tsp tomato paste also for the color and taste and this is also optional. Once start to boil then simmer it and cook it for 10 minutes and then off the flame. Our restaurant style tomato soup is ready to be served. Serve it hot.
Hint 1- If you don't want to add ginger, garlic and onion to the soup you can skip it.
2- You can even add a small piece of beetroot for colour. - 6
3- You can even cook it in a wok instead of pressure cook but with pressure cooking we get least wastage.
4- You can only make it in butter also.
For grilled cheese sandwich
Take any cheese and grate it. I had used cheddar cheese to that add all the ingredients mentioned above in the ingredients section of sandwich and mix it very well. Now take bread slices and toast them on a grill pan or any pan slightly from both sides. I am using milk bread you can use any of your choice. - 7
Once toasted then add 2-3 tbsp of cheese mixture on it and spread evenly. Cover it with another slice of toasted bread and press slightly. Like so make other sandwiches also. Grill it from both the sides and it's done. It takes less than 5 minutes for the sandwiches to be done. You can even make it in a sandwich maker.
Now soup and sandwiches both are ready. Serve it piping hot and enjoy it with your family and friends.
