Add enough cold water to cover the rice and let it rest for 20 minutes. Then strain and rinse thoroughly in water.

Melt the olive oil and butter in a pot.

Add the barleys and cook for 2-3 minutes until they start to brown lightly.

Then add the drained rice and salt and cook for 4-5 minutes, stirring occasionally.

Then add the hot water and when it starts to boil and bubbling, turn the bottom of the stove to the lowest temperature. Cook for 20-25 minutes under control, without burning the bottom.

After the pilaff is cooked, let it rest for 10-20 minutes.
