Mix the almond flour with the eggs, sugar, softened butter, and almond extract.

Spread the mixture over one sheet of puff pastry, leaving a 3/4-inch (2 cm) border around the edges.

Add chocolate chips and the fève if using. Moisten the edges of the pastry with water and place the second sheet of puff pastry on top.

Seal the edges by pressing with your fingers, then make slits with a knife toward the center.

Brush with beaten egg and create decorative patterns. Poke holes all over the top except in the center.

Bake for 30 minutes at 400°F (200°C).

When it comes out of the oven, brush the galette with a syrup made by boiling the water and sugar (50 grams each) together.
