Firstly, Take a poha in a large strainer

Wash the Poha 1-2 times gently, And soak the poha in water for 3-4 mins for softening

Now Roast the Peanuts and keep them aside.

Heat the kadhai and drop 3 tablespoon oil in it, Now add the mustard seeds when the seeds crackle add chopped onion, curry leaves, and green chilies and sauted it for 3-4 mins

Now add chopped vegetables like Potatoes, carrots, and peas.
Mix it well and cook covered until the veggies turn tender. This will take around 3-4 minutes. Stir in between occasionally to prevent sticking. - 6
Now add the turmeric powder and salt as per your taste, mix it well and cook for a minute.

Add the soaked poha.

Mix it well.

Add some drops of lemon juice, peanuts, and cook for 4-5 mins

Poha is ready now!!
Serve it hot and enjoy!!☺️
