Potato Latkes

Latkes are fritters made from grated potatoes with onion, eggs, and a flour made from matzah, a flat Jewish bread that contains no yeast. They are a traditional food for the Jewish holiday Hanukkah. I made these with regular all-purpose wheat flour. These potato fritters are delicious.

Prepare and measure all the ingredients.

Grate the potatoes after preparing the other ingredients. Once grated, place the potatoes in a clean kitchen towel and squeeze out as much liquid as possible.

In a bowl, mix the beaten eggs with the flour, salt, pepper, onion, parsley, and green onion. Add the grated potatoes and mix well.

Heat oil in a large skillet. Using a spoon, drop portions of the mixture into the hot oil and fry. Once one side is golden brown, flip and brown the other side.

You can serve these fritters as a side dish or enjoy them on their own as a snack. Serve with applesauce or sour cream if you like.
