Gather all the ingredients.

Grind all the ingredients together in a blender until smooth. Strain the mixture into a pot. Add turmeric, red chili powder, crushed dried fenugreek leaves, and salt. Mix well to make a thin batter. Place a stand in a large pan, add water as needed, cover, and heat.

Lightly grease a plate with vegetable oil. Pour 2 to 3 large spoonfuls of the batter onto the plate. Cover and cook on low heat for 5 to 7 minutes. Let it cool slightly, then cut into long strips with a knife.

Gently roll up the strips and place them in a bowl. For the tempering, heat oil in a pan and add mustard seeds and sesame seeds until they start to pop.

Add curry leaves and sliced green chilies. Turn off the heat and pour the tempering over the khandvi rolls.
