Steps

Take water in a big pan, bring it to 1 boil along with the spices.Add the soaked & drained rice. Cook it for 10 -12 minutes or till 80% cooked. Strain the rice & keep aside. Remove the bay leaf.

Fried dryfruits & saffron water : Deep fry cashews, almonds & kismis in hot oil.Keep them aside. Soak saffron strands in hot water & keep aside.

Vegetable gravy : Take oil in a pan, add cumin seeds, when they splutter add onions & saute. Add ginger - chilli paste & rest of the spices & salt. Saute well.

Add tomatoes & 2 tb.sp water. Saute tomatoes very well.Add mixed boiled vegetables, mix well. Add paneer piece.

Mix well.Cook for 5 minutes.Keep aside.

Curd Mixture : Take fresh curds in a bowl, add saffron strands with a tea spoon of water, chopped coriander & salt & mix well.Add this mixture to the cooled rice, mix well. Keep aside.

Assemble : Take a Borosil glassware bowl.Firstly make a layer of rice. Press the rice with back of the spoon.Sprinkle little saffron water on it. Press a few dry fruits on it. Now make vegetable layer on rice. Again press the remaining rice over the vegetable layer.Top it up with remaining saffron water & ghee. This way there will be 3 layers of biryani.

Heat a pan.Put the layered biryani bowl on the pan. Make the flame of the gas very slow.Cover & simmer biryani on slow flame for 25 - 30 minutes so all the juices blend very well with the rice layer. Switch off the gas. Invert the biryani bowl on a serving plate. Garnish with remaining dry fruits & birista. Serve hot with plain curds or any fruity or boondi raita.
