In a bowl add all the spices, sauces, gram flour and egg white. Mix well to make a smooth paste.

Add the chicken and mix to coat with the batter. Cover and refrigerate for 20 minutes.

In another bowl mix together the flour, corn flour and salt to taste.

Heat enough oil in a wok for deep frying.

Remove the chicken and dip the pieces in flour and dust off excess. Place on a tray and rest 2 minutes.

Deep fry the chicken in batches, on medium low flame till chicken is cooked inside, about 15 minutes. Increase the heat to high for 5 minutes till coating is crispy.

Remove on kitchen paper to drain off excess oil.

Serve with desired dips and chutneys.
