Ingredients

45 minutes
4-6 servings
  1. 1/2 kgchicken bone-in, pieces
  2. 1 tbsp.garam masala
  3. 2 tbsp.ginger-garlic paste
  4. 1 tsp.pepper powder
  5. 1 tsp.red chilli powder
  6. To taste, salt
  7. 2 tbsp.gram flour (besan)
  8. 2 tsp.lemon juice
  9. 1 tsp.green chilli paste sauce
  10. 1red chilli sauce
  11. 2 tsp.ketchup
  12. 1egg white
  13. 1/4 tsp.baking soda
  14. 1/4 cupall-purpose flour
  15. 1/4 cupcorn flour/starch
  16. As required, oil

Steps

45 minutes
  1. 1

    In a bowl add all the spices, sauces, gram flour and egg white. Mix well to make a smooth paste.

  2. 2

    Add the chicken and mix to coat with the batter. Cover and refrigerate for 20 minutes.

  3. 3

    In another bowl mix together the flour, corn flour and salt to taste.

  4. 4

    Heat enough oil in a wok for deep frying.

  5. 5

    Remove the chicken and dip the pieces in flour and dust off excess. Place on a tray and rest 2 minutes.

  6. 6

    Deep fry the chicken in batches, on medium low flame till chicken is cooked inside, about 15 minutes. Increase the heat to high for 5 minutes till coating is crispy.

  7. 7

    Remove on kitchen paper to drain off excess oil.

  8. 8

    Serve with desired dips and chutneys.
