Punjabi khatta meetha mixed vegetable pickle

Cut cauliflower into florets,radish into round shape,carrot and shalgam lengthwise.(appx.2 inches long pieces)

Boil water in a pan,add all the vegetables into it and switch off the gas stove after a boil.Strain it.Dry them on a cloth overnight.

Heat oil in a pan,add asafoetida and onion garlic,ginger paste.Add all the spices except raee and garam masala.Fry it unti it turns red in colour.Switch off the gas stove.Mix all the vegetables.Mix it well.

Now in another pan heat vinegar and jaggery until jaggery melts.Give it a boil and then
mix this mixture into vegetables.Mix it well.Mix raee and garam masala.Transfer it in a clean glass bottle.Keep it in the Sun for 2 days.Your tasty mixed pickle is ready to eat.Enjoy it with paratha,puri or pulao.
