An innovative idea by me for the children this Season. Rotis or Chapatis with Leeks for Breakfast are a real treat to the tastebuds. However these can be made for Lunch or Dinner too. Extremely soft and supple. Healthy and wholesome too. And making these for meals is almost a daily routine. And it's made very often in my house. Some like it simple without Oil or Ghee. Some like it with a generous brush of Oil while others want a lot of Ghee both in the dough while kneading it as well as while roasting them.
These are Rotis made with some freshly chopped Leeks available aplenty in the Vegetable markets these days and relished on almost any day or whenever we especially want something pure and homemade.
And we relish these with a generous dollop of Ghee on Weekends or when we have a family get together.
These can be packed for Lunchbox too. And any dry or wet Curry goes very well alongside them.
A treat to our tastebuds as well as a helluva lot healthy and nutritious, these are a perfect choice on any day. And these are extremely flavourful and aromatic with that amazing scent of Leeks. It's a great option for everyday meals. Hot Rotis with pure Ghee smeared on top is just pure love for me.

Ingredients

25-30 minutes
5 servings
  • 3 cupsWheat Flour or Sharbati Gehun Aata
  • 1 tspSalt
  • 2 tspGhee or Clarified Butter
  • 2-3 tbspchopped Coriander Leaves
  • 2big stalks finely chopped Leeks
  • as neededWater for the dough
  • as neededGhee or Oil for roasting

Steps

25-30 minutes

    Knead a smooth dough adding all the ingredients to a mixing bowl except the last one. Set aside for a couple of minutes. Use water as required. Lukewarm water helps in making the chapatis soft and supple. One important point to be noted here is that do not store the dough in the refrigerator. Use it all. And make it fresh whenever needed because leeks tend to release some water and therefore can make the dough loose and unsuitable for rolling a chapati.

    Heat a tawa or a griddle. In the meantime, divide the dough into balls of equal size either medium or small.

    Roll and roast them using oil or ghee as desired. Roast them well on both the sides pressing a little with a clean kitchen towel. Fluffy super soft rotis are done easily in just a few minutes. Serve hot with any side dish for a healthy breakfast, lunch or dinner.
