Ingredients

2 minutes
12 crêpes
  • 1 cupall-purpose flour (about 125 grams)
  • 1 cupcornstarch (about 125 grams)
  • 1 pinchsalt
  • 3eggs
  • 3 tablespoonscane sugar
  • 2 cupsalmond or hazelnut milk (about 500 ml)
  • 1 tablespoonvanilla extract
  • Sunflower oil

Steps

  1. 1

    In a mixing bowl, combine the flour, cornstarch, salt, and sugar. Add the beaten eggs.

  2. 2

    Gradually add the milk while whisking, then add the vanilla extract. Whisk vigorously (by hand or with a mixer) until smooth. If there are lumps, use an immersion blender to blend until smooth.

  3. 3

    Heat your crêpe pan and lightly grease it with sunflower oil. Pour a ladleful of batter onto the pan and cook each crêpe for 1 to 2 minutes on each side.

    Repeat until all the batter is used.

  4. 4

    Enjoy plain or with your favorite toppings.
