Season the beef with salt and pepper, add the yolk and work it in lightly. Slice the potato 3 mm thick and soak in a bowl of water for 5 minutes. Take the potato and put into a heatproof container, cover with plastic wrap and microwave for 90 seconds at 600 W.

Spread the beef, and wrap around the cooked potato slices. (Use 3 to 4 slices of potato for each hamburger.) Form into oval patties, and season with salt and pepper.

Put a little vegetable oil in a pan and brown the hamburgers. (Wipe fat that accumulates in the pan with paper towels.) When both sides are browned, add the wine, cover with a lid and let steam for 3 minutes. Transfer to serving plates.

Wipe the pan, add the ○ ingredients, and simmer to reduce. Add the grated daikon radish and mix. Pour the sauce over the hamburgers and they're done.
