Spicy tuna and leek spaghetti with asian flavours and a citrus twist

Wash the vegetables and then begin cooking the pasta.

Grind the peeled garlic and ginger into a pan, and toss in a few slices of chili for some extra heat.

Add the olive oil from the canned tuna to the pan, add more olive oil if necessary. Fry the mixture for a couple of minutes until it starts to turn brown.

Add the diced tomatoes and sliced leeks to the pan. Add a small pinch of salt, bearing in mind that the soy sauce, which we'll add later, is already quite salty.

Stir and cover with a lid, add more olive oil if necessary.

Once the vegetables have steamed, add the tuna.

Squeeze in the juice of a half lemon, add a dash of soy sauce and sprinkle in some red pepper. Mix everything together.

Add the cooked pasta and fry for 1-2 minutes, stirring occasionally.
