Ingredients

  1. 2large Idaho baking potatoes, 3/4 pound each
  2. 4 Tbscooked black turtle beans or white lima beans
  3. 4 Tbsshaved beef (optional)
  4. 4 Tbschopped mild white onion
  5. 2 Tbsunsalted butter
  6. 1 clovegarlic, minced
  7. 2 Tspwhite ground pepper
  8. 1 Tspflaked sea salt
  9. 1 cupgrated aged tillamook white cheddar
  10. 2 Tbscorn
  11. 2 Tbsripe avocado pieces
  12. 2 Tbschopped shiitake mushrooms
  13. 2 Tbschopped green pepper
  14. 2 Tbschopped red pepper
  15. 2 Tbschopped yellow pepper
  16. 2 Tbschopped Japapeno pepper, deseeded
  17. Topping:
  18. 4 Tbspico de gallo avocado mayo sauce
  19. 4 Tspchopped green onion
  20. 4 Tspchopped tomato
  21. Equipment: cast iron skillet
  22. Cost: potatoes $1, beef $1, vegetables $1, cheese & other $1, per dinner $2

Cooking Instructions

    Scrub potatoes and prick skin with fork every half inch, top and bottom. Rub with olive oil and flaked seasalt. Microwave ten minutes or oven bake 70 minutes at 350F. Cut in half, scoop out potato flesh, mash. Set potato skin boats aside. Glaze onions with minced garlic and spices in cast iron skillet. Add scooped out potato flesh and fry till crust develops. Pile half of veggies and grated cheese on top and fry till cheese melts.

    Place potato boats on top of potato latkes. Fill with chopped ingredients, grated cheese first, beef next, then veggies. Sprinkle grated cheese on top.

    Put potato boats in skillet in oven under low broiler till cheese has melted, about ten minutes. Turn broiler off, close oven, bake potatoes till grape tomatoes are done, another ten minutes. Serve with sauce and sprinkle with green onion.
