This herby, limey soup is sooo warming. You can buy a 'ghorme sabzi' dried herb blend in international supermarkets. It usually contains chives , coriander leaves , fenugreek leaves and parsley.

This herby, limey soup is sooo warming. You can buy a 'ghorme sabzi' dried herb blend in international supermarkets. It usually contains chives , coriander leaves , fenugreek leaves and parsley.

Heat a good splash of oil in a pan. Add garlic and bay and infuse for a minute on a low heat.

Rinse and add beans and a pinch of salt. Stir well for a minute so nicely coated in the garlicky oil.

Add potato, shallots, carrot and the herb mix. Stir well.

Add the bouillon, dried limes and pour in enough water to cover well. Add a good squeeze of lime.
Give it a taste and add more herbs if you feel it needs it

Bring to boil, then leave to simmer for 20-30 mins, or until the veg is tender and it's tasting fantastic.
Season to taste with salt and lime juice. Remove the dried limes - don't eat them!
Serve with drizzle of olive oil. Yum!
