Ingredients

10-12 minutes
8-10 people
  1. 10-12medium jalapeños
  2. 10-12 piecesraw bacon
  3. 1 1/2 cupsMexican cheese
  4. 8 ozcream cheese, softened at room temperature

Cooking Instructions

    Wash all jalapeños and slice tops off. Using a small spoon or knife, scrape out the insides of each jalapeño. (I used a 1/2 teaspoon measure, but you can also cut a small slit on the side of the jalapeño to allow your spoon to fit better.)

    Using a small butter knife, fill each jalapeño with softened cream cheese. (Be very careful and take your time to ensure your jalapeño doesn’t break.)

    Cut slices of bacon into equal halves and wrap each jalapeño in one of the half pieces of bacon.

    Place bacon wrapped jalapeños on a baking sheet (be careful to maintain their shape!), evenly spaced apart. Sprinkle cheese on top of each.

    Bake at 400 degrees for 12-15 minutes. Let cool slightly, and enjoy while warm!
