An easy one pot dish for any day with Snake Gourd and Long Green Eggplants as these are available aplenty in the markets. Addition of Kasuri Methi by me is an interesting twist in this particular Curry or Sabzi. This Vegetarian dish can be relished with both Rice and Rotis. Made with easily available pantry staples, this is one of the most popular dish in my house.
Though the preparation or the making process might differ from home to home, what matters is the taste. And it does taste yum. And with Snake Gourd added, you are rest assured about the flavour too. The best part is that it gets done quickly too. Absolutely delicious to the last bite. This dish is for keepsake. You will love it every bit and would want to make it more and more. At least once a Week or even twice if desired.
Green Eggplants and Gourds are absolutely good together. Not only this one, any other variety of it can also be used.

In a pan, heat some oil and add the ginger garlic green chilli paste. Saute it for a few seconds and then add in the asafoetida and the other ingredients as well. Saute onions on low heat until done. Now add the chopped tomatoes and cook until soft and mushy. Also, add chopped green chillies. And then finally add the eggplant and the sliced gourd both one after another.

Cover and cook on a low flame for 20-25. Do not add too much of water. Add a little to facilitate easy cooking of them. It will be done easily. If desired cook it for a little longer duration if you prefer it to be too soft. Just sprinkle some water so that the sabzi doesn't stick or get burnt at the bottom.

Relish this awesome sabzi well garnished with kasuri methi and serve hot as a delicious side dish to many an important meals. Yum! Enjoy!
