Diet-Friendly Soy Milk Risotto with Tofu

I made this for myself when I wasn't feeling so good.
I don't really want to cook anything elaborate just for just myself...
That's how I came up with this recipe: using my stocked up tofu and soy milk to make an easy and healthy risotto.
You can use ham or wiener sausages instead of bacon, add mushrooms, or even boiled asparagus instead of broccoli. Try mixing in all sorts of vegetables. It'd probably help sort out your fridge. For 1 serving. Recipe by Mi-chin

Chop the broccoli up into bite-sizes and boil until it's at the desired level of firmness. (You can also microwave it instead.)

Mince the onion. Chop up the bacon into bite-sized pieces.

Spread some olive oil (unlisted) in a pot. Sauté the onion until soft. Also add the bacon.

Pour the soy milk into the pot from Step 2. When warm, add the corn, broccoli, rice, and the tofu scooped with a spoon into an appropriate size. Season with soup stock granules and salt.

Dish it up, and enjoy with a dash of black pepper.
