Grilled Artichokes with Garlic, Oil, and Parsley Dressing

I tried some delicious artichokes with foie gras and had never cooked artichokes before, so I started with this recipe to see if I could get the hang of it. I had always used canned ones before.

I tried some delicious artichokes with foie gras and had never cooked artichokes before, so I started with this recipe to see if I could get the hang of it. I had always used canned ones before.

Wash the artichokes and boil them. Since these are large, I left them for about 20 minutes.

Once cooked, drain them and cool them in the same pot by running cold tap water over them.

Next, remove the outer layers, which are tougher, until you reach the tender parts, which are more yellow. Also, cut off the stem and any tough parts at the back.

Carefully open the leaves outward with your hands to create a flower shape.

Heat a pan, and when it's hot, add a splash of oil and place the artichokes in, face down first until they brown, then flip them over and remove.

While they are cooking, prepare the dressing. In a blender, combine 3 cloves of garlic, parsley, oil, and salt.

Plate the artichokes, pour the dressing over them, and add a bit of Maldon salt to taste.
