Lamb and cheese and mint were made for each other. This recipe marinades lamb chops overnight in fresh mint and milk. The chops are then seared, crusted with blue cheese and bread crumbs, and oven roasted in the same glass baking dish. Easy, quick, Juicy and crusty.

Ingredients

Overnight marinade, 1/2 hour bake.
2 people
  1. 2large thick lamb chops, bone in
  2. 1 Tbsolive oil
  3. 1 Cupmilk, 1 cup water
  4. 1/2 Cupfresh mint leaves, chopped
  5. 1/2 cupcrumbled blue cheese
  6. 1/2 cupbreadcrumbs
  7. PinchFlaked seasalt
  8. Pinchground white pepper
  9. Equipment: glass oven roasting dish
  10. Cost: pound of lamb $4, other $1, dinner for $2.50

Cooking Instructions

Overnight marinade, 1/2 hour bake.

    Chop mint leaves, add to milk, to release the mint oil in the marinade overnight. Pour over lamb chops in glass baking dish. Add water till submerged. Next morning, dry lambchops.

    Put lamb back in glass baking dish in preheated oven at 350 F degrees, bake till golden crispy, about 20 minutes. Take out lambchops, press into blue cheese and bread crumbs, back in baking dish till browned, about 10 minutes. Serve with lemon.
