  1. 1 cupdried peas
  2. 1 tablespooncoconut oil
  3. 1 teaspoonmustard seeds
  4. 1 teaspoonfennel seeds
  5. 1 tbspcoriander seeds
  6. 1/2 tbspginger, finely chopped
  7. Pinchasafetida
  8. 5red chilies
  9. 1/2 teaspoonturmeric powder
  10. 1/4 cupcurry leaves
  11. 1 cupgrated coconut, or cut into small pieces
  12. 1 tablespoonchanna
  13. 1 tablespoonurud
  14. as neededSalt

    Soak peas in 3 cups of water in a bowl for 4 hours. I usually soak overnight for convenience sake Peas absorb water and enlarge.
    I don't have a whistle cooker. Take enough water in a pressure cooker to generate enough steam Placw the bowl in the cooker, cover; turn on the stove, high flame.. As soon as the weight starts rotating, reduce the heat to simmer. Do not over cook. Cook Enough to get the peas soft. About 70-80%

    In a kadai over medium heat, fry channa, coriander seeds, urud and chillies separately. Turn off the stove when it gets aromatic.
    Remove from heat and keep in a bowl to cool. Once cooled, grind to a coarse powder in a blender.

    In a frying pan over medium heat, add mustard seeds, Let mustard splutter; then add fennel seeds, cumin seeds. 2red chilies. Add ginger, turmeric powder and curry leaves. Add coconut and fry until it slightly changes color-about 1 min. Add ground spices and stir.
    Add the cooked and drained peas and stir-fry for 4 minutes
    Salt to taste and cook for 2 more minutes. Remove from the stove. Sundal is ready to taste

    Transfer the sundal to a serving bowl. Enjoy the aromatic spicy flavorful tasty sundal
